Postprandial blood glucose — the value of blood glucose after a meal — is a much more sensitive indicator of cardiovascular risk than fasting blood glucose alone. That's why monitoring it is worthwhile, even if morning blood glucose is within the normal range.

When to Measure Postprandial Blood Glucose

Why Glucose Spikes are Dangerous

Each glucose spike causes a burst of free radicals that damage the endothelial cells of blood vessels. How to Reduce Postprandial Glucose Spikes

1. Order of foods in the meal

Eating carbohydrates last in the meal (after vegetables, proteins, and fats) reduces the postprandial glucose spike by 30–40%. The fiber in vegetables, fats, and proteins slow down gastric emptying and glucose absorption. Practical application: start with salad, then protein, then bread or pasta.

2. Choose low glycemic index carbohydrates

The glycemic index (GI) measures how quickly a food raises blood glucose compared to pure glucose (GI 100). Practical examples:
