Postprandial Blood Sugar: Normal Values and How to Reduce Spikes After Meals

Postprandial blood sugar – the blood glucose level after a meal – is a much more sensitive indicator of cardiovascular risk than fasting blood sugar alone. That's why monitoring it is worthwhile, even if your morning blood sugar is normal.

When to Measure Postprandial Blood Sugar

Postprandial measurement is taken 1 or 2 hours after the start of a meal (not the end). The two time points provide different information:

Why Blood Sugar Spikes Are Dangerous

Every blood sugar spike causes a flurry of free radicals that damage the endothelial cells of blood vessels. Epidemiological studies (DECODE Study, EPIC-Norfolk) show that 2-hour postprandial blood sugar predicts cardiovascular risk better than fasting blood sugar alone — even in people with normal morning blood sugar.

How to Reduce Postprandial Blood Sugar Spikes

1. Order of foods in a meal

Eating carbohydrates last in a meal (after vegetables, proteins, and fats) reduces the postprandial blood sugar peak by 30–40%. The fiber from vegetables, fats, and proteins slow down gastric emptying and glucose absorption. Practical application: start with salad, then protein, then bread or pasta.

2. Choose low glycemic index carbohydrates
